Thanksgiving: Ol No. 7 Yams
Source of Recipe
From "Paula Deen's Southern Cooking Bible"
List of Ingredients
- 4 large yams or orange sweet potatoes (3-1/2 to 4 pounds)
- 1/3 cup Jack Daniel's Old No. 7 Whiskey
- 1 cup packed light brown sugar
- 4 Tbsp (1/2 stick) butter
- 1/4 tsp grated nutmeg
- 1 cinnamon stick (3 to 4 inches)
- 1 long strip orange peel
Instructions
- Preheat the oven to 400°F. Bake the yams until they are tender when pierced with a fork, about 1 hour. Reduce the oven temperature to 350°. Remove the yams but leave the oven on. When the yams are cool enough to handle, peel them and cut crosswise into 1/2-inch thick rounds.
- Meanwhile, in a large saucepan, combine 3 cups water, the whiskey, brown sugar, butter, nutmeg, cinnamon stick, and orange peel. Bring to a boil over medium-high heat. Reduce to a simmer and cook until the sauce is slightly thickened and syrupy, 30 to 45 minutes.
- Place the yams in a medium baking dish. Pour the syrup over them and return to the oven to bake until the yams are fork-tender, about 30 minutes. Your house will smell so good while this is baking, you'll be holding them back from the table!
