Thanksgiving: Pecan Tassies

- ½ cup butter, softened
- 1 (3-ounce) package cream cheese, softened
- 1 cup all-purpose flour
- 1½ cups firmly packed light brown sugar
- 2 Tbsp butter, melted
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- 2/3 cup chopped pecans
Instructions
- Beat softened butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add flour, beating well. Cover and chill 2 hours.
- Shape dough into 30 (1-inch) balls; press balls into lightly greased mini (1¾-inch) muffin pans. Set aside.
Combine brown sugar and next 3 ingredients; stir well. Stir in pecans. Spoon 1 tablespoon pecan mixture into each pastry shell.
- Bake at 350° F for 25 minutes.
Remove from pans immediately, and cool completely on wire racks.
Makes 2½ dozen.
