Valentine's Day: Raspberries and Cream

- 4 ounces fresh raspberries
- 4 tsp sugar
- 2 Tbsp fresh orange juice
- 3/4 cup whipping cream
- 1 Tbsp confectioners' sugar
Instructions
- Pick over clean berries, discarding any spoiled ones. Sprinkle with sugar and orange juice. Stir gently, cover, and set aside for 20 to 30 minutes. Stir berries again, mashing five or six of them.
- In a separate bowl, whip cream with confectioners' sugar to soft peaks. Extract 2 tablespoons of the raspberry juices and add to the whipped cream. Continue whipping the cream to firm peaks.
- To serve, place four or five of the macerated berries in the bottom of each of the 2 parfait glasses. Drop 2 spoonfuls of the whipped cream on top of the berries. Repeat layering once more, ending with macerated berries. Serve with short biscuits, if desired.
Makes 2 servings.
