Fresh Mint Chocolate Chip Ice Cream

- 1/2 cup mint leaves
- 3/4 cup plus 2 Tbsp sugar
- 2 cups whole milk
- 1 cup heavy cream
- 8 large egg yolks
- 1/2 tsp salt
- 1/2 cup miniature chocolate chips
Instructions
- Combine mint leaves and 2 tablespoons of the sugar in a food processor; pulse until mint is coarsely chopped. In a heavy saucepan over medium heat, combine mint mixture, milk and cream; heat until just beginning to bubble at the edges. Remove from heat and let steep for 30 minutes.
- In a medium bowl, whisk together yolks and remaining 3/4 cup sugar until smooth. Whisk a small amount of the warm milk mixture into the egg mixture (tempering the eggs), then pour the whole egg mixture into the milk mixture. Cook over low heat, stirring constantly, until ice cream base registers 170� F and coats the back of a spoon.
- Immediately strain through a fine mesh strainer. Stir in salt and chill thoroughly. Freeze according to your ice cream maker's manufacturer's instructions, adding chocolate chips during the last couple of minutes of the freezing process.
Makes about 1 quart,
