Cooking with Paula Deen: Chocolate Celebration
List of Ingredients
- 7 egg yolks
- ¾ cup sugar
- 3 Tbsp unsweetened cocoa powder
- Dash salt
- 2 cups half-and-half
- 1½ cups heavy whipping cream
- 3 (1-ounce) squares semisweet chocolate
- 1 Tbsp vanilla extract
Instructions
- In a small bowl, whisk together egg yolks, sugar, cocoa and salt; set aside.
- In a large saucepan, combine half-and-half and cream. Heat over medium-low heat until cream mixture is barely simmering. Pour one-fourth of the hot cream mixture into the egg-yolk mixture, whisking constantly. Cook, over medium-low heat, until mixture is thickened and coats a spoon, about 10 minutes.
- Add chocolate and vanilla, stirring until chocolate is melted and mixture is smooth. Pour mixture through a sieve. Cover and chill for 4 hours. Freeze in an electric ice cream freezer according to manufacturer's instructions.
If desired, serve in ice cream cones, topped with chocolate sprinkles.
Makes about 6 cups.
