"Seemingly out of the blue while lazing on the couch, my son Luca asked me to make this for dinner one day. It was easy to trace his craving to a TV commercial for an 'endless pasta bowl.' I admit it—the commercial did make it look delicious. And, once again, we proved that homemade can be just as good—if not better than—what you see in the ethereal world of television advertising. Only a young athlete could handle the calorie intake of this butter- and cream-laden dish."
List of Ingredients
â—¦ 1 pound boneless, skinless chicken breasts
â—¦ Coarse salt and white pepper
â—¦ 2 tablespoons unsalted butter
â—¦ 4 cloves garlic
â—¦ 2 cups heavy cream
â—¦ 1 pound fettuccine
â—¦ ¾ cup grated Parmesan cheese, plus more for serving
Recipe
Cut the chicken into 1-inch-wide strips. Season with salt and white pepper. Melt the butter in a 12-inch skillet over medium-high heat. Add the chicken and sauté until cooked through, about 8 minutes.
Meanwhile, simmer the garlic cloves in the cream in a saucepan for 10 minutes.
Cook the pasta in a large pot of boiling salted water until al dente.
Pour the cream into the pan with the chicken, removing the garlic cloves. Stir in the Parmesan. Toss the pasta with the sauce and serve with extra Parmesan.
