Cinnamon French Toast

- 4 eggs
- 1 cup milk
- 1 tsp ground cinnamon, plus more for serving
- 8 slices good-quality day-old white bread, each about ½-inch thick
- 1 Tbsp unsalted butter, or as needed
- 1 Tbsp canola oil, or as needed
Instructions
- Preheat the oven to 200°F.
In a bowl, whisk together the eggs, milk, and cinnamon until lightly frothy. Pour into a large, shallow glass or ceramic dish and add enough bread slices to fit comfortably. Soak the slices, turning once, for a few seconds total. Carefully transfer the slices to a plate and repeat until all the slices are soaked.
- In a large, heavy frying pan or griddle over medium-low heat, warm 1½ teaspoons each butter and oil. When the fat is hot, add enough bread slices to fit comfortably in a single layer and cook until golden brown on the bottoms, about 2 minutes. Turn and cook until golden brown on the second sides, about 2 minutes longer. Transfer to a rimmed baking sheet and keep warm in the oven. Repeat with the remaining soaked bread, adding more butter and oil in equal amounts to the pan as needed.
- Just before serving, lightly sprinkle each slice with cinnamon.
