Pasta-Tuna Salad

List of Ingredients
- 4 Tbsp mayonnaise
- 1/2 tsp lemon juice
- 1/2 tsp dried parsley
- 1 small (6-1/2-oz.) can tuna, packed in water
- 2 Tbsp minced onion
- 2 Tbsp minced celery and/or cucumber
- 2 Tbsp diced green or red pepper
- 2 Tbsp grated carrot
- 2 cups cooked pasta (shells work particulary well)
Instructions
- In a medium-size bowl, combine the mayonnaise, lemon juice and parsley to make a dressing. Drain the tuna fish. Add the tuna and vegetables to the dressing. Add the pasta and toss until the salad is well-blended. Put it in lunch box containers and refrigerate overnight.
Yield: About 3 (1-cup) servings.
