◦  Cooking spray
◦  2 cups all-purpose flour
◦  ¼ cup packed light brown sugar
◦  2 tablespoons baking powder
◦  ½ teaspoon salt
◦  ½ cup creamy peanut butter
◦  1 cup whole milk
◦  1 large egg, lightly beaten
◦  3 tablespoons unsalted butter, melted
Recipe
Preheat the oven to 350° F. Coat 12 cups of a muffin tin with cooking spray.
In a food processor, combine the flour, brown sugar, baking powder, and salt. Add the peanut butter and pulse until the mixture resembles coarse crumbs. Add the milk, egg, and melted butter and pulse until combined.
Spoon the batter into the prepared muffin cups. Bake until golden brown on top and a toothpick inserted in the center comes out clean, 15 to 20 minutes. Cool in the tin for 20 minutes. Serve warm.
