◦  2 pounds ground beef
◦  1 large onion, chopped
◦  3½ cups spaghetti sauce
◦  1 package (16 ounces) spiral or cavatappi pasta, cooked and drained
◦  4 cups shredded part-skim mozzarella cheese
◦  8 ounces sliced pepperoni
Recipe
Preheat oven to 350° F. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and pasta.
Transfer to two greased 13 x 9-inch baking dishes. Sprinkle with cheese. Arrange pepperoni over the top.
Bake, uncovered, 25 to 30 minutes or until heated through.
Makes 2 casseroles
(10 servings each)
• Freeze Option:
Cool unbaked casseroles; cover and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350° F. Bake as directed, increasing time to 35 to 40 minutes or until heated through and a thermometer inserted in center reads 165° F.
