Sweet Peppers + Cheese Pizza
Source of Recipe
From "Little Bento" by Michele Olivier
List of Ingredients
- 2 large pita pockets, 1 lavash (cut in half), or 2 small pre-made crusts
- ½ cup pizza sauce
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
- ½ cup shredded mozzarella cheese
- â…“ cup chopped sweet peppers
Instructions
- Preheat the oven to 425° F. Line a baking sheet with aluminum foil.
- Place the crusts of choice on the baking sheet and bake for 3 to 5 minutes. Let cool slightly, then top with a thin layer of pizza sauce. Evenly sprinkle the garlic powder and oregano over the sauce and then top with the mozzarella, followed by the sweet peppers.
- Bake until the crust is golden brown and the cheese is melted, 7 to 9 minutes. Transfer the pizzas to a cutting board and let cool for 2 minutes. Cut each pizza into 8 wedges, and serve. If packing in a bento, cool the pizza wedges completely, about 10 minutes.
Makes 2 individual pizzas
Final Comments
• This recipe is super simple and made to adjust to whatever you have in your fridge, and whatever your kids like. Feel free to sub the sweet peppers out for halved cherry tomatoes, olives, green peppers, pineapple, ham, cooked sausage, mushrooms, red peppers, or anything else you have on hand.
