    Simple Chicken Burritos

    List of Ingredients


    • Two 10-inch flour tortillas
    • 1 cup shredded or chopped roasted chicken
    • ½ cup medium tomato salsa
    • Salt and freshly ground black pepper
    • ½ cup fresh corn kernels (from 1 to 2 ears), or ½ cup frozen corn
    • 1 cup shredded romaine or iceberg lettuce
    • 4 cherry tomatoes, quartered
    • ½ cup grated Cheddar cheese


    Instructions


    1. Lay the tortillas flat on a work surface.

    2. In a small bowl, toss the chicken with the salsa. Add salt and pepper to taste. Divide the chicken mixture between the tortillas, placing it in the center of the tortilla. Divide the corn, lettuce, tomatoes, and cheese evenly between the tortillas. Roll up the tortillas by folding in the sides and then rolling from bottom to top.

    3. Wrap the burritos in waxed paper or parchment paper to help them keep their shape, and place them on a microwave-safe plate. Microwave for 1 minute. Serve immediately, or wrap the burritos in foil to pack in a lunch box to be eaten later in the day.
