Tuna Macaroni Salad

List of Ingredients
- 8 ounces elbow macaroni
- 1 (7-ounce) can albacore tuna (packed in water or oil), drained
- 2 large celery ribs, thinly sliced
- 1 small red or green bell pepper, diced
- 1 medium carrot, grated
- ¼ cup finely chopped sweet onion, such as Maui, Walla Walla, or Vidalia
- ¼ cup chopped fresh parsley
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- Salt and pepper
- Lettuce such as romaine or iceberg, to serve
Instructions
- Cook the macaroni according to the directions on the package. Drain well, rinse, and cool.
- Flake the tuna in a large bowl. Add the macaroni, celery, bell pepper, carrot, onion, and parsley, and mix gently. Add the mayonnaise and lemon juice and toss to coat. Season to taste with salt and pepper.
- Line a bowl or platter with the lettuce, and heap the tuna salad on top. Serve immediately.
