Baked Pork Chops with Spiced Applesauce Glaze

"The natural affinity between the pig and the apple is respected in kitchens all over the country, but only in the South do cooks routinely bake pork chops, cutlets, steaks, country-style ribs, and even ham glazed with spicy applesauce—homemade or bottled. You can also braise these glazed chops for about an hour in a half cup of either apple or orange juice, in which case they need basting only once or twice to retain their moistness."

â—¦ 2 cups applesauce (not chunky)
â—¦ ¼ cup firmly packed light brown sugar
â—¦ ¼ teaspoon ground cinnamon
â—¦ Pinch of ground cloves
â—¦ 3 tablespoons all-purpose flour
â—¦ 1 teaspoon dry mustard
â—¦ Salt and freshly ground black pepper to taste
â—¦ 6 pork loin or rib chops, about 1 inch thick
Recipe
Preheat the oven to 325° F.
In a bowl, combine the applesauce, brown sugar, cinnamon, and cloves, stir till well blended, and set aside.
On a plate, combine the flour, mustard, and salt and pepper and mix till well blended. Dust the pork chops in the flour mixture, then spread both sides of each with the applesauce glaze. Arrange the chops on the rack of a broiling pan and bake till golden brown, about 1 hour, turning once.
Serve hot.
