"Jimmy won't listen to me, but one secret to my meat loaf is that I use moistened bread instead of bread crumbs to tighten the mixture. Also, I've never had much regard for catsup in or on anything, but I do think it helps produce a good meatloaf."
List of Ingredients
• 1 pound ground beef sirloin
• 1 pound ground beef chuck
• 2 medium-size onions, finely chopped
• ¼ cup or more catsup
• 2 Tbsp Worcestershire sauce
• 3 slices white bread, moistened with water and squeezed dry
• 2 tsp salt
• Freshly ground black pepper to taste
• 2 large eggs, beaten
Recipe
Preheat the oven to 350°F.
In a large mixing bowl, combine all the ingredients and mix well with your hands. Form the mixture into an oval loaf, place the loaf on a rack over a shallow baking pan, and bake till nicely browned on top, about 1 hour.
(To make a simple mushroom sauce, bring 2 cups beef stock or broth to a boil in a saucepan, add 3 tablespoons tomato catsup, stir, and cook till slightly reduced. Add 1 cup finely chopped mushrooms, a pinch dried thyme, ½ teaspoon salt, and freshly ground pepper to taste. Reduce the heat to moderate and cook till the sauce is reduced to desired consistency, about 10 minutes.)
