    Pineapple-Plum Pork Chops

    List of Ingredients


    • 6 pork loin chops, cut 1/2-inch thick (1-3/4 lbs.)
    • 1 (20-oz.) can pineapple chunks (juice pack)
    • 1/2 cup plum jam
    • 1 Tbsp vinegar
    • 1 Tbsp soy sauce
    • 1/2 tsp ground ginger
    • 4 green onions, sliced (1/4 cup)


    Instructions


    1. Trim fat from chops; cook fat in skillet until 1 tablespoon of fat accumulates (350 degrees on an electric skillet). Discard trimmings; brown chops in drippings. Reduce heat (220 degrees). Season with salt and pepper. Drain pineapple, reserving juice.

    2. Combine 1/2 cup of the reserved pineapple juice, the jam, vinegar, soy and ginger; pour over chops. Cover and simmer 25 minutes, adding 1/4 cup more juice, if needed.

    3. Remove cover; add pineapple and green onions. Spoon pan juices over. Cover and cook until pineapple is heated through.

      Makes 6 servings.
