Tried-and-True Meatloaf

- 1½ pounds lean ground beef
- 1 cup milk
- ¾ cup quick-cooking rolled oats
- 2 Tbsp minced onion, plus ¼ cup (divided)
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- 1 cup catsup
- ½ cup water
- 3 Tbsp white vinegar
- 2 Tbsp packed brown sugar
- 2 Tbsp Worcestershire sauce
Instructions
- Preheat oven to 400° F. Coat a 9- x 5-inch loaf pan with vegetable oil spray (unless using silicone, which does not need to be greased). In large bowl, combine ground beef, milk, oats, 2 tablespoons minced onion, salt and pepper. Mix well. Pack loosely into prepared loaf pan. Bake in preheated oven 10 minutes.
- Meanwhile, in bowl, combine catsup, water, remaining onion, vinegar, brown sugar, and Worcestershire sauce. Pour sauce over meatloaf.
- Return to oven and bake 75 to 80 minutes longer, checking after 60 minutes, or until thermometer inserted into center registers 160° F. Let stand 5 minutes. Drain off excess liquid before slicing. This is a traditional meatloaf best served with mashed potatoes.
Makes 4 to 6 servings.
