Bow Tie Pasta with Chicken & Vegetables

- 3 Tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 cup skim milk
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese

- 3 cups bow tie pasta
- 2 cloves garlic, minced
- 2 skinned and boned chicken breast halves, cut into 3/4-inch pieces
- Salt and pepper to taste (for seasoning chicken)
- 2 cups uncooked vegetables, cut into bite-size pieces (i.e., broccoli, carrots, and sweet peppers)
Instructions
- In a 1-1/2-quart saucepan, stir together flour, salt, pepper, and milk. Stir in chicken broth. Cook on medium heat, stirring often, until mixture is thickened and bubbly. Add 1/4 cup Parmesan cheese; cook and stir 2 minutes more.
- Cook pasta in a 2-1/2-quart saucepan according to package directions. After approximately 6 minutes, add vegetables and allow to cook for 3 minutes longer. Drain.
- While sauce and pasta are cooking, cook garlic and seasoned chicken in skillet over medium heat. Cook 5 to 6 minutes or until chicken is done.
- Combine chicken and sauce with pasta and vegetables. Garnish with remaining Parmesan cheese.
Makes 4 servings.
