Garlic Shrimp Spaghetti

List of Ingredients
- 8 ounces spaghetti
- 1/2 lb. medium shrimp (prawns)
- 1 cup water
- 3 Tbsp olive oil
- 2 medium cloves garlic, peeled and minced
- 1 large shallot, peeled and minced
- 1 small red bell pepper, stemmed, seeded and finely chopped
- 1/3 cup dry white wine
- 1/8 tsp crushed red pepper flakes
- 1/8 to 1/4 tsp salt
- 1/3 cup finely chopped parsley
- Freshly ground black pepper to taste
- 2 Tbsp grated Parmesan or Romano cheese
Instructions
- Bring a large pan of water to a boil for the spaghetti. Add the spaghetti and time according to package directions. Drain and set aside.
- Shell and devein the shrimp. Rinse shells briefly and put into a small saucepan with 1 cup water. Bring to a boil, reduce the heat and simmer 5 minutes.
- In a 12-inch nonstick skillet, heat the olive oil over medium heat until hot. Add the shrimp and saute until pink, curled and cooked through. Remove from the pan with a slotted spoon. Reduce heat to medium-low. Put the garlic, shallot and bell pepper into the pan. Saute until soft and golden, about 5 minutes. Add the wine, crushed red pepper flakes and salt; simmer 5 minutes. Strain the shrimp broth into the pan and simmer 2 minutes. Stir the shrimp into the sauce.
- Pour the spaghetti into the sauce. Stir a few minutes so that the pasta absorbs some of the sauce. Stir in the parsley, pepper and cheese; serve immediately.
