List of Ingredients
- 1/2 lb. sliced bacon
- 1/3 cup red wine vinegar
- 1/3 cup mayonnaise
- 3 Tbsp olive oil
- 1 Tbsp minced onion
- 3/4 tsp salt
- 1/4 tsp freshly ground pepper
- 12 ounces pappardelle pasta
- 1 pint cherry tomatoes, quartered
- 1/4 head iceberg lettuce, shredded
Instructions
- Cook bacon in a large skillet until crispy. Drain on paper towels and crumble.
- Whisk 1 tablespoon bacon fat in a bowl with vinegar, mayonnaise, olive oil, onion, salt and pepper until well blended.
- Cook pasta according to package directions. Drain. Toss with vinaigrette, bacon, tomatoes and lettuce.
Makes 4 to 6 servings.
