Pimiento Mac 'n' Cheese

- 2 cups uncooked elbow macaroni
- 2½ cups milk
- ½ cup mayonnaise
- ¼ cup butter, melted
- 2 Tbsp grated onion
- 1 Tbsp Worcestershire sauce
- ½ tsp salt
- ¼ tsp ground red pepper
- 1 large egg, lightly beaten
- 1 (4-ounce) jar diced pimientos, drained
- 1 (2-ounce) jar diced pimientos, drained
- 1 (8-ounce) package sharp Cheddar cheese, shredded
- 1 (8-ounce) package extra-sharp Cheddar cheese, shredded
Instructions
- Preheat oven to 350°. Cook macaroni in boiling salted water according to package directions; drain.
- Meanwhile, stir together milk and next 9 ingredients in a medium bowl. Spoon half of cooked macaroni into a greased 13 x 9-inch baking dish. Pour half of milk mixture over macaroni in dish; top with half of cheeses. Top with remaining half of macaroni, milk mixture, and cheeses.
- Bake, uncovered, at 350° for 40 minutes or until pasta mixture is set and cheese is golden.
Makes 8 to 10 servings.
