List of Ingredients
- 1 lb. penne pasta, cooked "al dente" (drained and rinsed)
- 2 lbs. fresh Roma tomatoes, coarsely chopped
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley
- 1/4 cup fresh oregano leaves
- 1/4 cup fresh mint leaves
- 1/2 cup olive oil
- 2 cloves garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded Parmesan cheese
Instructions
- Place cooked pasta in a large mixing bowl.
- Place tomatoes in food processor; pulse on and off until chopped into 1/2-inch pieces, not pureed. Transfer to bowl with pasta.
- Place herbs, oil, garlic, salt and pepper in food processor; pulse on and off until finely chopped. Transfer to bowl with pasta. Toss well. Adjust seasonings. Add cheese and refrigerate until ready to serve.
Serves 6 to 8
