Chicken Salad Croissants

"A classic picnic staple, chicken salad gets an upgrade by being served on croissants rather than bread. The croissants hold their shape in the refrigerator a little better, allowing them to be prepared ahead of time. Get creative with additions, and consider adding sliced grapes or slivered almonds. I like to add peanuts, but the nuts are entirely optional."
List of Ingredients
• 6 cups chopped cooked chicken
• 1¼ cups mayonnaise
• 3 green onions, thinly sliced
• 3 stalks celery, diced
• 2 tsp lemon juice
• ¼ tsp garlic powder
• 1 tsp dill weed
• ⅓ cup grated Parmesan cheese
• Salt and black pepper to taste
• ¼ cup chopped pecans (optional)
• 8 to 10 large croissants, split in half lengthwise
Stir together chicken and next seven ingredients; salt and pepper to taste. Sprinkle in chopped pecans, if desired.
Spoon mixture over croissant bottoms; replace top. Serve immediately, or cover and refrigerate until ready to serve.
