Baked Cod with Sweet Pepper Salsa

List of Ingredients
- 1 Tbsp olive oil
- 1/2 red onion, thinly sliced
- 1 medium yellow bell pepper, thinly sliced
- 1 medium red bell pepper, thinly sliced
- 1 Tbsp plus 2 tsp red-wine vinegar
- 1-1/3 lbs. true cod
- 1/8 tsp salt
- Freshly ground black pepper to taste
Instructions
- Heat olive oil in a large skillet.
- Add red onion and saute 2 minutes. Add bell peppers; saute 3 minutes over medium heat. Add vinegar and stir 2 minutes over medium-high heat. Transfer to a bowl.
- Sprinkle fish lightly with salt and pepper. Bake in a preheated 450-degree (F) oven 12 minutes per inch of thickness, or until done. Top with salsa.
Makes 4 servings.
