Baked Tortellini with Marinara and Mushrooms

- Vegetable cooking spray
- 1/4 lb. cremini mushrooms
- 1 pkg. (9 ounces) cheese tortellini, uncooked
- 1-1/2 cups bottled marinara sauce
- 1/2 cup water
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp ground black pepper
- 4 Tbsp grated Parmesan cheese
Instructions
- Preheat oven to 350° F. Lightly spray a 9-inch-square glass baking dish with cooking spray. Trim stems from mushrooms and wipe caps with a damp paper towel. Slice thinly.
- In a large bowl, stir together tortellini, mushrooms, marinara, water, basil, oregano and pepper, mixing well. Transfer to the prepared pan. Cover with aluminum foil and bake 25 minutes.
- Remove tortellini from oven. Stir gently and sprinkle top with grated cheese. Continue to bake, uncovered, 10 minutes. Test tortellini for tenderness and bake a few minutes longer, if necessary. Let sit 5 minutes before serving.
Makes 4 servings.
