- 1 egg
- 1/3 cup Italian-seasoned bread crumbs
- 2 Tbsp grated Parmesan or Romano cheese
- 4 boneless, skinless chicken breast halves
- 1 Tbsp olive oil
- 1 cup tomato pasta sauce
- 1 cup grated mozzarella cheese
Instructions
- Preheat oven to 375 degrees (F). Lightly beat the egg in a bowl. Mix together the bread crumbs and Parmesan; spread on a plate. Dredge the chicken in the egg and then in the bread crumbs mixture.
- Heat the oil in a large skillet with an oven-proof handle over medium heat. When hot, brown the chicken 2 minutes on each side.
- Spoon the tomato sauce over the chicken and sprinkle the cheese on top. Bake in the oven 15 minutes, or until the chicken tests done in its thickest part.
Makes 4 servings.
Final Comments
If your skillet doesn't have an oven-proof handle, transfer the chicken to a baking dish after browning, and proceed with the recipe.
