Easy Chicken Cacciatore Bake

- 1 can Italian-style diced tomatoes, undrained
- 2 cups zucchini slices, quartered
- 1/3 cup Shake 'n' Bake Original chicken seasoned coating mix
- 4 skinless and boneless chicken breast halves
- 1 Tbsp grated Parmesan cheese
- 1-1/2 cups penne pasta, cooked and drained
Instructions
- Preheat oven to 375° F. In a 13- x 9-inch glass baking dish, toss tomatoes and juices with zucchini slices. Set aside.
- Place coating mix in resealable plastic bag. Place chicken in bag and turn to coat. Remove chicken and place breasts over zucchini mixture, laying flat. Sprinkle with Parmesan cheese.
- Place in oven and bake 30 to 35 minutes, or until chicken is cooked throughout. Serve over pasta.
Makes 4 servings.
