Fresh Mushroom Soup

List of Ingredients
- 1 lb. mushrooms, cleaned and sliced
- 6 Tbsp butter
- 1 onion, finely chopped
- 1/2 tsp sugar
- 3 Tbsp flour
- 3 cups chicken broth
- 1/2 cup dry vermouth
- 2 Tbsp fresh parsley, chopped or snipped
Instructions
- Melt butter in saucepan. Saute onions sprinkled with sugar until golden. Add mushrooms and stir for a few minutes. Sprinkle with the flour and cook for a few minutes.
- Add chicken broth, stirring until slightly thickened. Just before serving, stir in Vermouth and heat until steaming hot. Garnish each bowl with parsley.
Makes 4 to 6 servings.
