Quick Tuna Noodle Casserole

List of Ingredients
- 2-1/2 cups egg noodles
- 1 tsp olive oil
- 4 medium green onions, finely chopped
- 1 (6-1/2-ounce) can water-packed tuna, drained and flaked
- 1/4 cup sour cream or yogurt
- 1/4 cup light mayonnaise
- 1 Tbsp capers
- 3/4 tsp dried dill, crushed
- 2 tsp lime juice
- 1/8 tsp salt
- Freshly ground black pepper to taste
Instructions
- Bring a pan of water to a boil, add the egg noodles and time according to package directions.
- While the noodles are cooking, heat the olive oil in a skillet set over medium heat. Add the green onions and saute 1 minute. Remove from the heat and stir in the tuna, sour cream, light mayonnaise, capers and dill.
- Drain the noodles. Add to the sour cream mixture in the pan, stirring to coat well. Stir in the lime juice, salt and pepper. Spoon into a small casserole dish and broil about 4 inches from the heat source until the top just starts to bubble. Serve immediately.
