Red Pepper French-Bread Pizzas

List of Ingredients
- 1 Tbsp olive oil
- 1 small onion, halved and thinly sliced
- 2 medium red bell peppers, halved, seeded and thinly sliced
- 1 medium clove garlic, peeled and minced
- 8 black olives, either domestic or imported, pitted and coarsely chopped
- 1 Tbsp balsamic vinegar
- Freshly ground black pepper to taste
- 1/4 cup finely chopped parsley
- 2 French rolls, 6 inches long, halved
- 1/2 cup shredded low-fat mozzarella cheese
- 2 Tbsp grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees (F). Heat the olive oil in a skillet set over medium heat. Add the onion and saute 3 minutes. Add the bell peppers and garlic; saute 5 minutes.
- Add the vinegar, olives, several grindings black pepper and parsley, stirring to blend. Cook 2 minutes.
- Put the French bread halves on a baking sheet, cut side up. Spoon the peppers on top and sprinkle with the mozzarella and Parmesan. Bake 10 minutes. Put under a hot broiler briefly to brown the tops lightly, and serve.
Makes 4 pieces.
