Salmon in Pepper

List of Ingredients
- 1 Tbsp soy sauce
- 1 Tbsp lemon juice
- 1 clove garlic, peeled and forced through a press
- 1 tsp sugar
- 1-1/3 lbs. salmon fillet
- 1 tsp olive oil
- 1-1/2 tsp coarsely ground black pepper
- Lemon wedges
Instructions
- Combine the soy sauce, lemon juice, garlic and sugar. Place the salmon in a glass dish and pour the marinade over. Refrigerate 30 minutes, or up to 2 hours.
- Place the salmon in a foil-lined baking pan and rub the olive oil onto it. Sprinkle with the pepper.
- Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until the salmon tests done and reaches an internal temperature of 140 degrees. Serve with lemon wedges.
