Salsa-Braised Halibut

List of Ingredients
- 1 Tbsp vegetable or light olive oil
- 1/4 cup minced shallots
- 1 cup thinly sliced red bell pepper
- 1-3/4 cups bottled salsa (mild or medium-strength)
- 1 Tbsp lime juice
- 1-1/3 lbs. fresh halibut fillet, cut into 4 serving pieces
- 1/8 tsp salt
- Freshly ground black pepper to taste
- Lime wedges
Instructions
- In a large (10- to 12-inch) nonstick skillet, heat oil over medium heat. Add shallots and bell pepper; sauté 5 minutes. (Add a tablespoon of water if the vegetables begin to stick.) Stir in salsa and lime juice; bring to a simmer.
- Lay the halibut in the pan and sprinkle with salt and pepper. Spoon some of the sauce over the fish. Cover and cook 3 minutes. Turn fish over and continue cooking a total of 12 minutes per inch of thickness, or until fish just starts to flake.
- Transfer halibut to plates. Spoon salsa on top and serve with wedges of lime.
Makes 4 servings.
