San Diego Soft Tacos

List of Ingredients
- 1-1/2 cups sour cream
- 2 cloves garlic, pressed
- 1-1/2 tsp chili powder
- 1/3 cup fresh chopped cilantro
- 1 tsp salt
- 1 tsp ground cumin
- 1 large (8-oz.) can diced green chiles
- 1-1/2 cups grated Swiss cheese
- 1 bunch green onions, chopped (including green tops)
- 2 cups cooked chicken or turkey
- 10 flour tortillas
- 1 cup grated Cheddar cheese
Instructions
- Combine the sour cream, garlic, chili powder, cilantro, salt, cumin, chiles, Swiss cheese and onions. Chop the chicken meat into 1/2-inch pieces and add to the other ingredients. Moosh everything around with a wooden spoon.
- Spoon 1/2 cup of this muck down the center of each tortilla. Roll up and place seam-side down in oven dish. Cover with foil and bake 20 minutes in a 375-degree (F) oven.
- Remove dish from oven. Scatter the Cheddar cheese over the tortillas. Return to oven and bake a further 3 or 4 minutes, uncovered, until cheese has melted.
This recipe is fine as is. But if you want to embellish it a bit, you can pass around bowls of shredded lettuce, chopped tomatoes, guacamole and red salsa that your guests can use to further jazz up their tacos.
