Wok Chicken with Herbs

List of Ingredients
- 1 lb. boneless, skinless chicken breast meat
- All-Purpose Chinese Marinade (recipe follows) or your favorite wok marinade
- 2 Tbsp cooking oil
- 1/4 cup cilantro sprigs, mint leaves OR small basil leaves
- Assorted salad greens lightly dressed with oil and vinegar

- 1 Tbsp dark soy sauce
- 1 Tbsp hoisin sauce
- 1 Tbsp dry sherry or Chinese rice wine
- 1 Tbsp dark sesame oil
- Several grinds of black pepper or up to 1 tsp Asian chile sauce
Instructions
- Make marinade by combining all marinade ingredients and mixing well.
- Cut chicken into 1/4 x 1-inch rectangles. Place chicken in a bowl and add the marinade. Mix well, cover and refrigerate until 5 minutes before cooking.
- Place a wok over high heat. When wok is very hot, add cooking oil quickly and quickly roll around bottom one-third of wok. When oil is hot, carefully add chicken and stir and toss until it is mostly opaque, about 2 minutes. Stir in the cilantro.
To serve: Place mixture atop the salad greens on dinner plates. Serve at once.
Makes 2 to 4 servings.
