    List of Ingredients


    • 1 Tbsp olive oil
    • 1 cup long-grain white rice
    • 1 cup finely diced celery
    • 1 medium onion, chopped
    • 1 clove garlic, finely chopped
    • 1-3/4 cups chicken broth (or stock)
    • 2 Tbsp fresh lemon juice
    • 1 Tbsp butter
    • 3 Tbsp finely chopped dill
    • 2 tsp sugar
    • 1/4 tsp pepper
    • Pinch of salt
    • 4 lemon slices
    • 1 sprig fresh dill, for garnish


    Instructions


    1. Cook olive oil and rice in a heavy, medium-size saucepan over moderate heat, stirring, until rice grains are golden brown, 3 to 5 minutes.

    2. Add celery, onion, and garlic. Stir over moderate heat until softened, about 3 minutes. Stir in broth, lemon juice, butter, dill, sugar, pepper, and salt. Bring to boiling. Float lemon slices on top.

    3. Cover rice and lower heat; simmer until rice is tender and liquid is absorbed -- 15 to 18 minutes. Let stand for 10 minutes; serve garnished with fresh dill sprig, if desired.
