Cucumber Onion Salad

Recipe Introduction
"This is one of my mother's favorite summer salads; it was, and is, almost effortless to make. I have taken liberties with it, changing the yellow onion to red, the white distilled vinegar to rice vinegar, and adding a bit of thyme. Instead of using cucumbers with thick green skins, I use Kirbys, the cucumbers my mother used for pickling."
List of Ingredients
â—¦ ½ cup rice vinegar
â—¦ 4 teaspoons superfine sugar
â—¦ 4 teaspoons fresh thyme leaves
â—¦ 4 large Kirby cucumbers, scrubbed but not peeled
â—¦ 4 thin slices red onion, chopped
Recipe
Stir the vinegar with the sugar and thyme.
Thinly slice the cucumbers and stir into the dressing with the onion. Serve immediately or allow to rest a couple of hours.
