    Fruity Yogurt Chicken Salad

    Recipe Introduction

    "This is a light and refreshing chicken salad that is delicious scooped over a bed of greens or served on a croissant. The slightly sweet flavor and colorful fruit really set this salad apart from any other chicken salad I have tried."

    List of Ingredients

    ◦ cup vanilla Greek yogurt
    ◦ ⅓ cup light mayonnaise
    ◦ 2 tablespoons fresh lemon juice
    ◦ teaspoon salt
    ◦ teaspoon ground black pepper
    ◦ 4 cups chopped, cooked chicken breast
    ◦ 1 cup chopped strawberries
    ◦ 1 cup mandarin oranges
    ◦ cup sliced almonds
    ◦ 2 green onions, sliced

    Recipe

    Whisk together the yogurt, mayonnaise, lemon juice, salt, and pepper in a small bowl. In a large bowl toss together the chicken, strawberries, oranges, almonds, and green onions. Pour the dressing over the chicken mixture, and toss everything together gently until the chicken is well coated and the salad is mixed.

    Refrigerate the salad for about 30 minutes before serving it on croissants or on top of mixed greens.

    Makes 4 to 6 servings
