Baguette BLTs with Spicy Moroccan Mayo

Recipe Introduction
"All-American and all grown up, a BLT with fancy bacon and a harissa-based mayo is both filling and indulgent. This is inspired by my favorite brunch sandwich at Tbsp in New York City. Use harissa, a sweet and spicy North African pepper paste to make the mayo, a complement to smoky bacon. Thick, juicy, in-season tomatoes, a key ingredient to the success of this sandwich, are at their peak in late summer, just in time to settle into a sandwich that requires little cooking at all."
List of Ingredients
◦ 8 to 12 slices thick-cut smoked bacon
◦ 2 large beefsteak or heirloom tomatoes (about 2 pounds), cut in thick rounds
◦ Sea salt
◦ Freshly ground black pepper
◦ 1 fresh baguette
◦ 2 handfuls mixed greens such as a mizuna, arugula, or mesclun mix
◦ Spicy Mayo (recipe follows)
Recipe
Preheat the oven to 425 F. Arrange the bacon in a single layer on a wire rack set on top of a baking sheet. Cook until the bacon is crisp, rotating the baking sheet halfway through cooking, about 12 minutes total. Remove from the oven and set aside to cool.
Arrange the tomato slices on plates lined with paper towels and season with salt and pepper. Let the tomatoes drain while you prepare the bread.
Halve the baguette lengthwise and then crosswise into four segments to make four large sandwiches. Spread both cut sides with mayo and layer with cooked bacon, mixed greens, and tomatoes. Serve immediately.

"Creamy mayonnaise mixed with Greek yogurt is the perfect, luscious base to tame the feisty heat of a hot red pepper paste. Stir in North African harissa, Hungarian hot red pepper paste, Southeast Asian sambal oelek, or Sriracha sauce to add a fiery streak to your favorite snack or supper."
◦ cup Greek yogurt
◦ cup olive-oil mayonnaise or regular mayonnaise
◦ 2 to 3 tablespoons hot pepper sauce or paste
◦ Pinch of fine sea salt
◦ Freshly ground black pepper
Mix together the yogurt, mayonnaise, and enough hot pepper paste to make you sweat. Season to taste with salt and pepper. Serve on everything your heart desires, especially Baguette BLTs with Spicy Moroccan Mayo. Store in the fridge for up to 4 days.
