Caesar Salad Sandwich

List of Ingredients
- 3/4 cup light mayonnaise
- 4 anchovy fillets, rinsed, patted dry, finely chopped
- 1 medium clove garlic, peeled and forced through a press
- Finely grated peel of 1 lemon
- 2 Tbsp lemon juice
- 1 tsp Dijon mustard
- Freshly ground black pepper to taste
- 6 hard-cooked eggs
- 4 kaiser or sandwich rolls, split
- 4 Tbsp coarsely grated Parmesan cheese
- 8 small crisp romaine leaves
Instructions
- Combine mayonnaise, anchovy, garlic, lemon peel and juice, mustard and several grindings black pepper. Reserve 1/4 cup.
- Peel eggs and mash coarsely. Combine with 1/2 cup mayonnaise.
- Toast rolls under a hot broiler. Remove from oven and spread with the reserved mayonnaise. Pile egg salad on the rolls and sprinkle with Parmesan. Top with romaine leaves and close the rolls.
Makes 4 servings.
