    Caesar Salad Sandwich

    List of Ingredients


    • 3/4 cup light mayonnaise
    • 4 anchovy fillets, rinsed, patted dry, finely chopped
    • 1 medium clove garlic, peeled and forced through a press
    • Finely grated peel of 1 lemon
    • 2 Tbsp lemon juice
    • 1 tsp Dijon mustard
    • Freshly ground black pepper to taste
    • 6 hard-cooked eggs
    • 4 kaiser or sandwich rolls, split
    • 4 Tbsp coarsely grated Parmesan cheese
    • 8 small crisp romaine leaves


    Instructions


    1. Combine mayonnaise, anchovy, garlic, lemon peel and juice, mustard and several grindings black pepper. Reserve 1/4 cup.

    2. Peel eggs and mash coarsely. Combine with 1/2 cup mayonnaise.

    3. Toast rolls under a hot broiler. Remove from oven and spread with the reserved mayonnaise. Pile egg salad on the rolls and sprinkle with Parmesan. Top with romaine leaves and close the rolls.

      Makes 4 servings.
