Cajun-Spiced Grouper Sandwiches

List of Ingredients
- Four 4-ounce grouper (or cod) fillets
- 2 tsp Cajun seasoning
- 4 onion sandwich buns, split, toasted
- 1/4 cup tartar sauce
- 4 tomato slices
- 4 lettuce leaves
Instructions
- Spray medium skillet with nonstick cooking spray. Heat over medium-high heat until hot.
- Pat fillets dry with paper towel; sprinkle both sides with Cajun seasoning. Cook 10 to 14 minutes, or until fish flakes easily with fork, turning once.
- To assemble sandwiches: Spread sandwich bun halves with tartar sauce. Fill each with tomato slice, lettuce leaf and cooked fillet.
Makes 4 sandwiches.
