Fried Grouper Sandwich

- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 Tbsp garlic powder
- 1/2 tsp freshly ground pepper
- 4 (4-oz.) grouper fillets
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/2 cup buttermilk
- Canola oil
- 4 onion sandwich rolls, split

- 1 (10-oz.) pkg. finely shredded cabbage
- 1/2 carrot, shredded
- 1/4 cup sugar
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
- 1/4 cup mayonnaise
- 2 Tbsp milk
- 2 Tbsp buttermilk
- 1-1/2 Tbsp fresh lemon juice
- 1 Tbsp white vinegar
Instructions
- First, prepare the coleslaw: Combine shredded cabbage and carrot in a large bowl. Whisk together sugar and remaining coleslaw ingredients until blended; toss with cabbage mixture. Cover and chill for at least 2 hours. (Yield: 4 cups) The coleslaw recipe can be halved, but it's so good you'll want enough for leftovers.
- Combine flour, cornstarch, garlic powder, and pepper in a large shallow dish. Set aside.
- Sprinkle fillets with salt and pepper. Dredge in flour mixture; dip in buttermilk, and dredge in flour mixture again.
- Pour oil to a depth of 3 inches in a Dutch oven; heat to 350 degrees. Fry fish 5 to 6 minutes or until golden; drain on paper towels.
Serve on rolls with creamy coleslaw.
Makes 4 servings.
