Grilled Brioche and Country Ham Sandwich

List of Ingredients
- 12 brioche slices, approximately 1/3-inch thick each
- 12 Virginia ham slices (1/16-inch-thick slices)
- 2 cups grated Gruyere cheese
- 1/2 cup melted butter
- .
- -- Tarragon Mayonnaise --
- 1/3 cup mayonnaise
- 1 tsp whole grain mustard
- 1 tsp chopped fresh tarragon
- Salt and pepper to taste
Instructions
- Take brioche slices and form sandwiches with ham slices and cheese. Brush sandwiches with melted butter on both sides and grill. (An electric grill, outdoor grill or cast iron grill pan can be used.) Be sure to achieve a high enough heat to achieve grill marks and for cheese to melt thoroughly. Remove from heat and allow sandwiches to rest.
- For the tarragon mayonnaise: Combine mayonnaise, mustard, herbs and seasoning; mix to combine.
- Cut sandwiches into quarters and serve with tarragon mayonnaise on the side.
