Smoked Pork Sandwich

List of Ingredients
- 1 Tbsp kosher salt
- 1 tsp dry mustard
- 1 tsp ground ginger
- 1 Tbsp brown sugar
- 1 tsp ground coriander
- 1/4 tsp ground cloves
- 3- to 5-lb. lean pork tenderloin
- 1 roasted poblano pepper (sliced)
- 1 roasted red pepper (sliced)
- Caramelized onions
- 6 ounces chicken stock
- 1-1/2 ounces butter
- 2 ounces Pick-a-Peppa sauce
- Sourdough bread slices
- 4 ounces smoked mozzarella cheese slices
Instructions
- Mix spices and rub into raw meat. Smoke 2-1/2 hours on the grill. (Apple chips are recommended for smoking.)
- Slice meat and brown in canola oil. Add peppers, then onions. Add chicken stock. Add butter. Add Pick-a-Peppa sauce. Mix well and cook 5 minutes.
- Place mixture over sourdough bread slices. (Bread slices can be brushed with garlic oil, if desired.) Top with smoked mozzarella. Heat in oven until cheese melts.
