    Bar Nuts

    From "Union Square Café Cookbook"


    List of Ingredients


    • 1/4 lb. each peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole, unpeeled almonds (or 1-3/4 lbs. unsalted, assorted nuts)
    • 2 Tbsp chopped fresh rosemary
    • 1/2 tsp cayenne
    • 2 tsp dark brown sugar
    • 2 tsp kosher salt
    • 1 Tbsp butter, melted


    Instructions


    1. Spread nuts on a cookie sheet and toast in a preheated 350º F oven until they are light golden brown, about 10 minutes.

    2. In a large bowl, combine the rosemary, cayenne, sugar, salt and butter.

    3. Thoroughly toss the warm nuts with the spiced butter and serve warm.

      Makes about 6 cups.

      NOTE: If you can't find assorted unsalted nuts, buy the salted variety and reduce or eliminate the salt in the recipe.
