Cocktail Cheese Crackers

List of Ingredients
- 1-3/4 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp paprika
- 1/4 tsp cayenne pepper, or to taste
- 1 cup freshly grated Parmesan cheese
- 1 cup grated Swiss cheese
- 1/2 cup butter, chilled
- 1 egg
- 1/2 cup whipping cream
- 1 egg yolk
- 1 Tbsp milk
- 2 Tbsp poppy seeds or sesame seeds
Instructions
- In a large bowl, blend the flour, baking powder, salt, paprika and cayenne. Stir in the Parmesan and Swiss cheeses. Cut in the butter until the mixture resembles fine crumbs. In a small bowl, beat the egg. Stir in the whipping cream and add to the flour mixture. Toss with a fork until the mixture binds together. Knead the dough in a bowl about 10 strokes or until smooth.
- On a lightly floured surface, roll out half of the dough to a 10-inch square. Cut the dough into 2-inch squares. Place, 2 inches apart, on ungreased baking sheets. Whisk together the egg yolk and milk. Brush each square with the yolk mixture. Sprinkle with the seeds; repeat with the remaining dough.
- Bake in a preheated 375-degree (F) oven for 10 to 12 minutes, or until the edges are golden. Remove from the baking sheets and cool on wire racks. Store in airtight containers.
Makes 50 crackers.
