Ginger-Glazed Almonds

List of Ingredients
- 2 Tbsp unsalted butter
- 3 Tbsp packed brown sugar
- 2 Tbsp water
- 1 Tbsp finely grated peeled fresh ginger
- 1-1/4 tsp kosher salt
- 1/4 tsp ground ginger
- 1/4 tsp cayenne
- 2 cups whole almonds with skins
Instructions
- Preheat oven to 300 degrees (F). Melt butter in a 12-inch nonstick skillet over moderate heat.
- Add remaining ingredients (except almonds) and cook, stirring, until sugar is dissolved. Remove from heat, then add almonds and stir until well coated.
- Spread almonds in a lightly oiled shallow (1 inch deep) baking pan and bake, stirring occasionally, until insides of nuts are golden, about 25 minutes. Cut one open to test. Cool completely.
Makes 2 cups.
