    Oatmeal Cookie Granola

    "I think we can all agree: Granola is a dangerous thing. You swing by your local Whole Foods, fill a bag full from the bulk bin, and before you know it, you're pulling into your driveway with an empty plastic bag for a passenger and crumbs covering your legs. Where did it all go? What just happened? Granola is one of those munchies that seem impossible to stop eating once you've started. And the worst part is the suggested serving size? How unfair. It's, like, ridiculously small to the point of embarrassment. I need at least 3 times as much to satisfy my crunch craving and, well, you know I want even more than that. This is a super-basic granola but one of my favorites. It tastes like a giant oatmeal cookie and due to its simplicity is just begging for you to add something extra that you may want. Dried mango slices? Peanut butter morsels? Vanilla beans or even salty pecans? I'm so overwhelmed."

    List of Ingredients

    â—¦ 2 ¼ cups old-fashioned rolled oats
    â—¦ 1 cup sliced almonds
    â—¦ ½ cup ground flaxseed
    â—¦ 1 tablespoon light brown sugar
    â—¦ 1 teaspoon ground cinnamon
    â—¦ ¼ teaspoon salt
    â—¦ ½ cup honey
    â—¦ 2 tablespoons unsalted butter, browned
    â—¦ 2 tablespoons coconut oil
    â—¦ 2 teaspoons vanilla extract
    â—¦ ½ cup miniature chocolate chips

    Recipe

    Preheat the oven to 325° F and line a baking sheet with parchment paper.

    In a large bowl, whisk together the oats, almonds, flaxseed, brown sugar, cinnamon and salt.

    Heat a small saucepan over low heat and add the honey, brown butter, coconut oil, and vanilla extract. Stir until the liquid is warm and the ingredients have melted together. Remove the pan from the heat and pour the mixture over the oats. Stir it with a large spoon to coat and bring the mixture together. Spread it evenly over the parchment-covered baking sheet.

    Bake for 10 minutes; then use a spatula to toss the granola. Bake for 10 minutes more and then toss again. Bake for an additional 10 minutes, tossing twice during the cooking time. Remove the pan from the oven and let cool for 5 minutes.

    Sprinkle the chocolate chips over the granola and lightly toss.
    Let the granola cool completely on the baking sheet.

    Makes about 4 cups
