Peanut Butter-Chocolate Quesadillas

Recipe Introduction
"A flour tortilla serves as a cross between a crpe and a pancake in this warm, satisfying dessert (or anytime snack) that comes together in just a few minutes and offers far greater rewardsbut no greater effortthan making a PB&J. There's no queso in this quesadilla; instead, you'll spread peanut butter (creamy or crunchy) over half of a tortilla, top the nut butter with a handful of chocolate chips, and fold the tortilla in half. Toast the quesadilla in a little butter until it's crispy and browned, the peanut butter is warmed through, and the chocolate chips are melty. As you might imagine, this template lends itself beautifully to improvisation with other fillings and toppings. Add some thinly sliced bananas, apples, or strawberries along with the chocolate chips. Sprinkle with confectioners' sugar, if you like. Or see the cannoli-inspired variation."

◦ 2 (10-inch) flour tortillas
◦ cup creamy or chunky peanut butter
◦ 2 tablespoons chocolate chips
◦ 2 tablespoons unsalted butter, divided
Recipe
Lay tortillas on cutting board. Spread 2 tablespoons peanut butter over half of each tortilla, leaving -inch border around edge. Sprinkle 1 tablespoon chocolate chips over peanut butter on each tortilla, then fold other half of tortilla over top.
Melt 1 tablespoon butter in 10- or 12-inch nonstick skillet over medium-low heat. Place one filled tortilla in skillet and cook until crispy and well browned, about 2 minutes. Flip tortilla and cook until second side is crispy and well browned, 1 to 2 minutes. Transfer quesadilla to cutting board and let cool slightly. Repeat with remaining 1 tablespoon butter and remaining filled tortilla. Cut into wedges and serve.

❧ VariationCannoli Quesadillas:
Substitute cup ricotta cheese mixed with 1 tablespoon confectioners' sugar for peanut butter. Use semisweet chocolate chips. Add 1 tablespoon toasted chopped pistachios and teaspoon lemon or orange zest to each tortilla when adding chocolate chips. Before serving, sprinkle with confectioners' sugar.
