Beer-Cheese Soup

List of Ingredients
- ¼ cup butter or margarine
- ¼ cup all-purpose flour
- 2 cups half-and-half
- 1 (12-ounce) can beer
- 1 (16-ounce) loaf pasteurized prepared cheese product, cubed
- 1 Tbsp Worcestershire sauce
- ¼ tsp ground red pepper
- ¼ tsp hot sauce
- 1/8 tsp salt
- Ground red pepper
Instructions
- Melt butter in a Dutch oven or large saucepan over medium-low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.
- Gradually add half-and-half and beer; cook over medium heat, stirring constantly with a wire whisk, until thickened.
- Add cheese; cook over medium heat until cheese melts. Stir in Worcestershire sauce, ¼ teaspoon red pepper, hot sauce, and salt. Ladle into bowls. Sprinkle with additional red pepper before serving.
Yield: 5 cups
