Caramelized Onion Soup

List of Ingredients
- 1/4 cup unsalted butter (1/2 stick)
- 1-3/4 lbs. white onions, coarsely chopped
- 1 lb. red onions, coarsely chopped
- 1 lb. leeks, coarsely chopped (white and pale green parts only)
- 3 large shallots, coarsely chopped
- 4 cloves garlic
- 2 cups Madeira wine
- 8 cups chicken stock or canned broth
- 1/2 tsp dried sage
- 1 large bay leaf
- Pinch of dried thyme
- 1 Tbsp Parmesan cheese, per serving
- Finely chopped fresh parsley (pinch per serving)
Instructions
- Melt butter in medium stockpot over medium-high heat. Saute onions and leeks until nicely browned (caramelized). Add shallots and garlic; saute 2 minutes.
- Add remaining ingredients (except Parmesan and parsley). Simmer 20 minutes.
Ladle into bowls and garnish with Parmesan and parsley.
